Description
One of the most ancient French cheeses. Extremely popular back in the Middle Ages.
The maturation of this cheese starts from the outside, and then moves inward. The process of aging is completed only when the first incision is made. The cheese is prepared in round forms, called cakes. The aroma is sweet, with a light hint of hazelnut. Consistency - smooth and oily, color - straw-yellow.
