Coconut milk is a rich white creamy liquid made from grated and pressed coconut flesh. Coconut Milk is a key ingredient in curries and Keralan dishes.
Coconut milk is also used in sweet dishes – particularly South East Asian desserts like Indonesian serabi cake and agar agar jellies. Increasingly, coconut milk is being used as a substitute for animal milk in ice cream, yogurt and rice puddings. It can also be used in smoothies, cocktails – and a spoonful of coconut milk over a bowl of fruit also puts an exotic twist on a plain dessert.
