Thanks to its content, pistachio may be considered complete nourishment and an important source of polyunsaturated fatty acids (Omega 3, Omega 6) that reduce the risk of cardiovascular disease and have antioxidant properties.
Peeled pistachio is used mainly in the sausage-making industry, in particular in Bologna sausage (Mortadella) filling.
However, thanks to its unique flavour and the ease in which it can be used, it has innumerable other employments in gastronomy and confectionery (first and second courses, cakes, desserts, etc.).
