Description
Distillation takes place in twin sets of copper pot stills for both the wash and spirit. All are indirectly heated using steam coils. The tall vertical necks are designed to produce a lighter style of new make spirit at around 70% abv. Maturation takes place mostly in white American oak ex-Bourbon barrels, approximately 10% is aged in used European oak. The distillery pipes its water from the Pitilie Burn, prized for its purity & mineral content.
