Parmigiano Reggiano or Parmezan Cheese is the king of cheeses made in Italy in Emilia-Romagna. The name "Parmesan" is often used imitations of this cheese, although European jurisprudence forbids this. The secret of Parmigiano Reggiano is the unchanged methods since the 12th century. The cows eat only fresh grass, hay or alfalfa.

Parmigiano-Reggiano cheese has a sharp, complex fruity/nutty taste with a strong savoury flavor and a slightly gritty texture.  It is brittle and crumbly, with tiny crunchy crystals of calcium lactate.
